Chicken Fried Steak or Pork Cutlets
This is probably one of the most time-consuming recipes I make. (It takes about 25 minutes and my wonderful husband does the sides) You can do this recipe with beef cube steak or tenderized pork cutlets. The pork is normally cheaper and my family prefers it. Make extras and use them for lunch or leftovers later in the week.
Equipment
Ingredients
- 4-8 beef cube steaks or pork cutlets
- 1/2 cup vegetable oil
- 1 egg
- 1/2 cup milk
- 1 cup flour
- 2 tsp salt
- 2 tsp pepper
- 1/2 tsp garlic powder
- 1 tbsp Slap Ya Momma seasoning (optional)
- 1/2 tsp red peppers flakes (optional)
- extra milk and flour for gravy
Instructions
- Heat a half-inch of oil in electric skillet on high.
- Combine milk and egg in one bowl.
- Combine dry ingredients in a wide, shallow bowl.
- Place individual pieces of meat in egg mixture then coat in flour mixture.
- Place in the hot oil.
- Cook on one side until the meat is brown and turns loose easily.
- Flip. Cook on the other side until brown and turns loose easily.
- If you have more to cook, place the cooked meat on a baking sheet in a warm oven. Cook the rest of the meat.
- When the meat is done, make the gravy.
Gravy Making
- Turn heat to medium.
- Pour out all but two or three Tbsp of oil. Use a glass bowl to put the excess in. (Don't be twenty-something me)
- Put two or three Tbsps of the seasoned flour into the oil, scraping the bottom constantly until it begins to turn brown,
- Add milk 1/4 to 1/2 cup at a time, constantly stirring. The gravy will bubble and thicken, to almost too thick. Add more milk. Continue to add more milk slowly and let it bubble until it reaches desired consistency.
