The Best Zucchini Tots
These tots are handy little summer side dishes for burgers and sandwiches. They are so easy and provide a way to get rid of the extra Zucchini the neighbor brought over. (Our family will leave garden vegetables on neighbors' porches.

Ingredients
- 1/4 cup finely diced onion
- 1 cup shredded zucchini (see recipe note)
- 1/3 cup shredded cheese
- 1/3 cup plain breadcrumbs
- 1 egg
- 1 pinch each of black pepper, salt, and garlic powder
Instructions
- Squeeze excess water from the zucchini. Some people salt it and allow it to drain in a collander. I find this makes zucchini shreds soft and you want them firmer in this recipe.
- Instead, wrap the shreds in a clean dishtowel and twist to remove excess moisture.
- Preheat oven to 400.
- Mix all ingredients together in a bowl until combined.
- Spray a baking sheet with pan spray.
- With your hands, shape 1 Tbsp of the mixture into tater tot shaped creations and place them on the pan. Repeat until the mixture is used. It usually makes 14-16.
- Bake for 10 minutes.
- Flip the tots over and bake another 8 minutes.
Notes
To squeeze water from zucchini I also use blue paper shop towels. They come in a roll like paper towels, but they are stronger. We use these at home instead of paper towels, it takes far less of these than regular paper towels.
The smaller the zucchini, the less water it will have in it to begin with.
Shredded zucchini can be frozen in a plastic baggie and used for this recipe in the winter, just thaw before using it.
