Favorite Mexican Casserole
This is a super easy Mexican casserole.

Ingredients
- 1 lb ground beef browned and drained
- 2 cups cooked long grain rice
- 1 can mild enchilada sauce
- 1 cup frozen corn
- 1 4 oz can green chilis chopped
- 3 cups chopped tomatoes
- 2 cups shredded cheese
- 1 cup tortilla chips crushed
Instructions
- Start rice. (I use long grain rice, it has a better texture than minute rice.)
- Brown and drain hamburger.
- Mix together beef, rice, sauce, chilis, and corn on low heat until combined.
- Spoon into a sprayed casserole dish.
- Top with tomatoes, cheese, and chips.
- Bake for 25 minutes.
- Serve with sour cream and a salad.
Notes
My sons always ate this as kids with flour tortillas and queso.
