This is a super easy Mexican casserole.

Ingredients
  

  • 1 lb ground beef browned and drained
  • 2 cups cooked long grain rice
  • 1 can mild enchilada sauce
  • 1 cup frozen corn
  • 1 4 oz can green chilis chopped
  • 3 cups chopped tomatoes
  • 2 cups shredded cheese
  • 1 cup tortilla chips crushed

Instructions
 

  • Start rice. (I use long grain rice, it has a better texture than minute rice.)
  • Brown and drain hamburger.
  • Mix together beef, rice, sauce, chilis, and corn on low heat until combined.
  • Spoon into a sprayed casserole dish.
  • Top with tomatoes, cheese, and chips.
  • Bake for 25 minutes.
  • Serve with sour cream and a salad.

Notes

My sons always ate this as kids with flour tortillas and queso.
