Sheet Pan or Grilled Vegetables
This side is easy and pairs with grilled meats or chicken fried steak.
Equipment
Ingredients
- 2-3 cups potatoes diced in 1 inch cubes
- 1 red onion diced in 1 inch pieces
- 4 cups yellow squash or zucchini squash cut in 1 inch slices
- 2 Tbsp olive oil
- salt, pepper, seasoning of choice
- Slap Ya Mamma seasoning
Instructions
- In a large bowl, mix all ingredients.
- Line baking sheet with foil.
- Place ingredients on foil.
- Bake at 400 on middle rack for 20-30 minutes, stirring occasionally, until veggies are tender and a little brown.
- Alternative- Place ingredients in a grill pan and grill on medium heat until tender.
Notes
We use Slap Ya Mamma seasoning on this and add fresh herbs like basil and rosemary,
