Chicken Manicotti
This simple meal goes together fast and makes two casseroles. You can freeze one for later.

Ingredients
- 1 package chicken breasts, 3 or 4, per package
- garlic powder
- 1 lb italian sausage, casings removed and browned
- 1 box dry manicotti shells
- 2 jars marinara sauce
- 1 carton sliced mushrooms
- 4 cups shredded mozarella
- 2/3 cup water
Instructions
- Preheat oven to 375
- Spray two casserole dishes with pan spray.
- Sprinkle garlic powder all ovr chicken.
- Slice chicken into quarter inch thick strips.
- Stuff the strips into the uncooked manicotti shells.
- Put a 1/3 cup sauce into the bottom of each dish
- Evenly divide the manicotti between the two dishes.
- Sprinkle with sausage and mushrooms.
- Pour on the remaining marinara sauce.
- Top with the cheese.
- Pour 1/3 cup of water around the edge of each dish.
- Cover and bake 50-55 minutes.
- Uncover and bake 5 more minutes.
- Cover the other casserole and freeze. To use, thaw in refrigerator for 24 hours. Bake as directed.
- Serve with a salad.
