Makes Two Chicken Manicotti

Chicken Manicotti

This simple meal goes together fast and makes two casseroles. You can freeze one for later.

Ingredients
  

  • 1 package chicken breasts, 3 or 4, per package
  • garlic powder
  • 1 lb italian sausage, casings removed and browned
  • 1 box dry manicotti shells
  • 2 jars marinara sauce
  • 1 carton sliced mushrooms
  • 4 cups shredded mozarella
  • 2/3 cup water

Instructions
 

  • Preheat oven to 375
  • Spray two casserole dishes with pan spray.
  • Sprinkle garlic powder all ovr chicken.
  • Slice chicken into quarter inch thick strips.
  • Stuff the strips into the uncooked manicotti shells.
  • Put a 1/3 cup sauce into the bottom of each dish
  • Evenly divide the manicotti between the two dishes.
  • Sprinkle with sausage and mushrooms.
  • Pour on the remaining marinara sauce.
  • Top with the cheese.
  • Pour 1/3 cup of water around the edge of each dish.
  • Cover and bake 50-55 minutes.
  • Uncover and bake 5 more minutes.
  • Cover the other casserole and freeze. To use, thaw in refrigerator for 24 hours. Bake as directed.
  • Serve with a salad.
