Mini-Meatloaf with Vegetables

These mini-meatloaves are perfect for feeding any size family with no mess.

Ingredients
  

  • 2 eggs
  • 2 lbs ground beef
  • 1 sleeve saltine crackers crushed
  • 2 tsp seasoned salt, divided
  • 1 tsp garlic powder, divided
  • 1 tsp pepper, divided
  • 1/2 cup preferred condiment- AI, Heinz 57, BBQ Sauce
  • 4 large potatoes, peeled and cut into 2 inch pieces
  • 2 tsp olive oil, divided
  • 1 lb brussel sprouts, halved or asparagus or carrots

Instructions
 

  • Preheat oven to 425
  • Combine eggs, hamburger, saltines, 1 tsp seasoned salt, 1/2 teaspooon pepper.
  • Shape into six loaves. Place onto a sheet pan covered in foil and sprayed with pan spray
  • Brush on the condiment.
  • Place in oven for 25 min.
  • Meanwhile mix potatoes with one tsp of oil, 1 tsp seasoning salt, half tsp pepper, 1/2 tsp garlic powder
  • Mix brussel sprounts with 1 tsp olive oil
  • After the meatloves have baked for 25 min, arrange the potatoes and brussel sprounts down the center of the sheet pan, between rows of meat loaves.
  • Bake for another 20-25 minutes until the potatoes are tender.
  • Serve with a salad or another vegetable if desired.
