Mom’s Beef Stroganoff
This slow cooker meal is perfect for an easy, delicious meal that comes together quickly after a long day of work.

Ingredients
- 2-3 lb beef round steak
- 1 sliced onion
- 2 cans cream of mushroom soup (I use the heart healthy one)
- 1 carton sliced mushrooms, I use the baby portabello
- 1 cup sour cream
- salt and pepper to taste
- hot cooked egg noodles or rice
Instructions
- Spray crock-pot and set it on low.
- Slice the onions and place them in the bottom.
- Lightly salt and peppers the beef and place it on top of onions.
- Cover and cook for 7 hours or until you get home from work. (It can be longer)
- Place the mushrooms on top of beef and add the two cans of soup. Let it cook another hour or so. (It can be longer)
- Add sour cream and stir.
- Serve immediately over rice or noodles.
