So Easy Beef Enchiladas
These beef enchiladas are easy with few ingredients. Use mild enchilada sauce fo make the recipe family friendly.

- 1 lb ground beef
- 1 cup sour cream
- 1-2 cups monteray jack cheese or pepper jack
- 1 can 1 large can of enchilada sauce or 2 small cans
- 10-12 flour tortillas (8 to 10 inches)
Instructions
- Preheat oven to 350.
- Spray casserole dish and set it aside.
- Brown hamburger, drain, rinse, return to the skillet.
- Bring the meat back to hot and turn off the heat.
- Add the cheese and sour cream, Stir until the cheese is melted and the sour cream is combined.
- Pour a cup of enchilada sauce into a pie pan. (You may have to add more.)
- Dip one flour tortilla into the sauce, coating both sides.
- Working over the casserole dish, place 1/4-1/2 cup of the beef mixture into the middle of the tortilla. Roll it up and place it seam-side down in the casserole.
- Repeat with the remaining 9-11 tortillas, lining them up in the dish.
- Pour the remaining enchilada sauce over the enchiladas.
- Bake uncovered for 30 minutes.
Notes
I am not sure why this recipe works, but it does. Do not add seasoning or anything to the beef but sour cream and cheese.
